Ingredients

 

medium red potatoes

Wild Mushroom -Sage Olive Oil

cheese of your choice

salt & pepper

fresh chives

sour cream

Directions:

Preheat oven to 400.

Cut potatoes into slices that do not go all the way through, keeping potatoes whole. ( * Tip: Put potato between two chop sticks or skewers while cutting so your slices won’t go all the way through.) Pour Mushroom olive oil into a large bowl and toss potatoes liberally in the oil, making sure to get in between the slices. Arrange potatoes on a foil lined baking sheet. Sprinkle with salt and pepper to taste.

Bake for 30 minutes until edges begin to turn golden brown. Sprinkle with cheese and bake for another 15-20 minutes until fully tender and golden brown.

Sprinkle with chives for garnish. And serve with sour cream.
