Ingredients

 

3/4 cup dark rum

3 Tbs fresh lime juice

3 Tbs soy sauce

3 Tbs Fig Balsamic Vinegar

5 large garlic cloves, minced

3 chopped scallions

2 Tbs Baklouti Green Chili Olive Oil

2 Tbs fresh ginger, minced

1 & 1/2 tsp ground all-spice

kosher salt & fresh pepper

12 jumbo chicken wings

Directions:

Make marinade: Combine all ingredients in bowl (minus wings and scallions). Salt= 2 Tbs ; pepper= 1/2 tsp. Place wings in a resealable bag and add marinade. Refrigerate at least 4 hours or overnight. 
Drain wings, reserving marinade. Heat and bring marinade to a boil in small saucepan and cook until reduced, about 5-7 minutes. Meanwhile, prepare grill – cook wings on medium heat on grill, or baked in oven. Remove wings once cooked through. Toss in reduced marinade. Place wings back on grill and cook until sauce is caramelized, 3-4 minutes. Top with chopped scallions and serve.
